It’s one of the most accessible, inexpensive local foods for visitors passing through rural villages.
The dough is rolled thin by hand, filled with a savory mixture — most commonly spinach and cheese (ıspanaklı peynirli), potato (patatesli), or minced meat (kıymalı) — folded, and cooked on a domed or flat griddle called a sac, traditionally heated over a wood fire. It’s a genuinely widespread everyday food across rural Turkey, not something invented for tourists, though Cappadocia’s valley-hiking routes and village stops have made it a common tourist encounter, often prepared visibly at outdoor stalls.
Village stops along popular hiking routes — particularly around Pigeon Valley, Love Valley and Ihlara Valley — often have small, family-run gözleme stalls or restaurants, frequently with the dough being rolled and cooked in view of customers. It’s a natural, inexpensive lunch stop mid-hike rather than a destination restaurant meal.
