Turkish Tea Culture: Why the Glass Never Empties

Why is tea such a big deal in Türkiye?

Türkiye is among the world’s heaviest per-capita tea drinkers. Çay is not a break from the day, it is the texture of it — served in shops while you browse, in offices during meetings, on ferries, and continuously at any social gathering.

Refusing tea is not rude, but accepting it signals you are not in a hurry. In a carpet or jewellery shop, accepting a glass carries no obligation to buy, whatever the seller implies — that is a sales technique, not a social rule.

How is Turkish tea actually made?

It is brewed in a çaydanlık, a stacked double kettle. Strong tea steeps in the top pot while water boils below, and each glass is mixed to taste — koyu (dark) or açık (light). It is drunk from tulip-shaped glasses without milk, usually with sugar cubes on the side.

Ordering tea like a local

  1. Ask for çay, not “Turkish tea” — the latter marks you as a tourist and sometimes a higher price.
  2. Specify koyu for strong or açık for weaker.
  3. Hold the glass by the rim, not the body, or you will burn your fingers.
  4. Stir the sugar, then rest the spoon on the saucer.
  5. Leave the glass upside down or say teşekkürler when you have had enough — otherwise refills keep arriving.

Where does Turkish tea come from?

Almost all of it is grown around Rize on the Black Sea coast, where the wet climate suits it. The industry dates from the 1920s, when the young republic sought a domestic alternative to imported coffee.
